Smoked Bologna – Recipe

As earlier stated, you don't have to be a professional chef to make homemade smoked bologna successfully. All you need to do is follow the instructions below, and you're good to go.

Ingredients
  

  • 4 lbs. bologna chub
  • 4 tbsp yellow mustard
  • 1 cup brown sugar
  • 4 tsp soy sauce
  • Worcestershire sauce

Instructions
 

  • Score your bologna with a boning or filet knife and make it ½ inch deep. This will enable the seasoning to penetrate deep into the bologna for a more tasteful experience. You could make your cutting horizontally and vertically, just make sure you do it all over.
  • Get a bowl and mix all the ingredients (brown sugar, mustard, soy sauce, and Worcestershire sauce together).
  • Rub the mixed ingredients all over the bologna.
  • Next, set the temperature of your smoker to 250 degrees, or you could use a smoker thermometer to get a more reliable and accurate reading of the temperature. 
  • Cook for 3-4 hours
  • Remove smoked bologna from the smoker or grill and allow it to cool.
  • Slice and serve as desired, either as stuffed smoked bologna or smoked bologna roll.

Notes

If you still have more sauce, you can glaze more of it on the bologna while cooking. You could do this between hours.
